Being able to cook a meal when the meat is frozen is so convenient on busy nights! 4 chicken thighs1/2 c. onion, diced1/2 c. honey1/3 c. soy sauce1/4 c. catsup2 T. oil2 t. garlic, minced1/4 t. red pepper flakes1/8 t. pepper2 T. cornstarch2 T. watercooked rice Arrange chicken thighs in a 5-quart electric pressure cooker. In a bowl, combine remaining ingredients except cornstarch, water and rice; spoon over chicken. Close and lock lid. Set to cook on high pressure for 15 minutes, or 25 minutes if chicken is frozen.Open pressure cooker using natural release method for 5 minutes, then quick release. Transfer chicken to a platter; cover to keep warm. Mix together cornstarch and cold water in a cup. Add to liquid in pressure cooker; cook on sear or sauté until thickened. Serve chicken overcooked rice, topped with sauce from pressure cooker. Serves 4.
